Bamboo fungus was a scarce ingredient until recently when farms began cultivating them. Today, it is commonly found in vegetarian dishes. We wrap the net-like fungus over a stewed cabbage, before ladling over a clear gravy comprising diced mushroom, sweet corn, carrot and wolfberries.
