A tribute to the Samsui women, who came to Singapore from Guangdong to work as labourers in the construction industry from the 1930s to 80s’. Known to be resilient individuals, they helped build up the country’s infrastructure. They were also thrifty and ate simply. Occasionally, they treated themselves to fish, but only if it could be bought cheaply. They steamed the fish with soy sauce, ginger, spring onions, mushrooms, black olives and red dates, and packed it in a lunch box for eating at their worksites. You can have a selection of fish to be cooked the same way.
