Sweet and Sour Soft Shell Crab (糖醋软壳蟹)
Crabs caught just after moulting are dredged in flour and deep fried till golden. They are then stir
fried quickly in a sweet and sour sauce and served crispy. The dish is an all-time favourite in our buffet.
Great with rice and beer too.
